I have chosen tofeature the "Dai Pai Dong" in my orchestral work outof a desire to promote the unique Hong Kong cultureto people of other countries.The music divides into three sections and the musicalstructure of the piece is based on the typicalChinese method of frying: first heating up the wok,then adding ginger, green onion or garlic, stirfrying with other ingredients, and finally seasoningwith salt and other flavors. The music is dominatedby two musical themes with contrastingcharacteristics. Both themes are based upon anexploration of Cantonese throught the menu of theCantonese dishes. The use of Cantonese-based themesrepresents the friendliness and loyalty of the HongKong people.

Steam cooking, pan searing, stir-frying and deep-frying are the four most common techniques of Chinese cooking. Each one produces a different result, even though for the same material.
